Payesh is a very famous Bengali dessert which is prepared at every Bengali household on every special occasion. Serving Payesh is considered as a good start to a occasion. Be it the first grain offered to a 6 months old or as a blessing on someone's birthday, Payesh is a Must. It can prepared with either sugar or Gur (Jaggery). In both way it comes out to be a super tasty dessert. Natun gur or Nalen gur is a type of jaggery which is only available during the winters from the tree of dates. In Bengal you will find sweets made of Natun Gur like Rasogolla, various types of Sandesh, Rasomalai, Makha Sandesh etc in the local sweet shops during this time. We Bengalis also prepare Payesh and Pithe with Natun Gur during winters at home . Here I am using the junk form of the Natun gur called "Patali" for the Payesh.
